Cap Steak is hard to find...
it's the muscle over the rib eye muscle. so tender, and covered by fat.
Costco used to carry it years ago, for a long time, but no one knew where the "Cap" was. didn't sell well, and discontinued. by the time i found out what that cut was, it was too late.
