That's a trick question. All the ingredients play a part in a delicious taco. If one ingredient is not fresh then it lowers the taste overall.

The spices in the carnitas. It's got to be marinated right. Throw that in a warm tortilla with celery, unions and some sauce of your liking and you have yourself breakfast, lunch and dinner.

Celery and unions...strange combination. Personally, I'd prefer onions and roasted poblano chile.

There is no one important ingredient. You can have trash tacos and have bomb salsa which masks the flavor of the meat.

The meat is most important (old carnitas taste like plastic) and the garnishments like cilantro and onions need to be fresh and cut thin.

Gotta have a good pig first, the quality of the meat makes a BIG difference. This is only followed by a cook that knows his marinade ingredients and times it right. Best carnitas I have ever have, even after traveling the world for years, is Casa Trejo in Yucaipa, CA.
