Johnny's pasta sauce

Ingredients
1 jar of ragu (chunky garden style)

Cooking instructions
Cook pasta. Dump sauce on pasta.

Marcella Hazan's cookbook "Essentials of Classic Italian Cooking' is excellent.
If your serious about Italian cooking get it.

Another sauce that is easy and good.

1 - 28oz can of San Marzano whole peeled tomatoes. ( cored and crushed)
1 - Med Onion chopped fine.
1 - Med carrot, peeled and shredded fine.
2 - Fresh Thyme sprigs.
1 - Clove of garlic, thinly sliced.
12 - oz Italian sausage (3 - links) (mild or hot).
Fresh basil.
Extra virgin olive oil
Salt

Take one of the sausage links and remove the casing.
Place the sausage in a heavy bottomed saute pan and add 2 Tbsp olive oil.
With one hand mix the sausage and oil until the sausage is loose and well separated.
add the chopped onions add heat slowly on med heat until the sausage is lightly browned.
Add the carrots and thyme, toss until soft, about 4 minutes.
Add the garlic, stir or toss until the garlic is fragrant. another minute or two.
Add the tomatoes and bring them to a simmer, then reduce the heat stirring occasionally.

Boil the pasta in salted water until it begins to soften ( 5 minutes)
With tongs transfer the pasta to the pan with sauce and continue to cook until Al dente.
Turn off the heat and add the fresh Basil ( whole leaf or hand torn not cut), stir and serve.
