Ah yes Cucumis Melo L.var. Inodorus good question. Im Mejico they are sold when they are most ripe. But in Merica they are picked and brought to market green.
Hence greengo. Americans always want things fast hence fast food.

I grew some good watermelons last summer.

I'm not a farmer, but I do appreciate a nice pair of melons.
Typically if a product is allowed to ripen on the vine, it will be spoiled by the time it makes it to market...especially when being shipped from far away lands, such as central or south america.
You need to learn and develop the skill of thumping melons to determine ripeness, or buy when green and give time for it to ripen on the window sill at hime (sorry I meant home).

besides, no good local melons this year, only mexican honeydews, and they're never ripe

Last sumo tournament for the year just ended in Japan.
Why can't they just leave them in the field longer to try and get them riper????
