I always struggled with why they named the grocery store Smith's also. Mainly because I can't say my s's that well lol.

Maybe the proper noun is "Chili" and the 's is to show the the possessive tense. For example, the owner of the restaurant is named Chile. Chili's would then mean "This is Chili's place."

Terlingua Texas - most say was the first "Chili cookoff".
Chillis used to have pictures on their walls EVERYWHERE celebrating this annual event.
First location was in a "wet" area of Dallas in 1975. (since closed) A decade or more later sold to Brinker's.
Yes, Chilli was a majior part of it's earlier menu's.
