Unfortunately some great OC hiking spots are now charred wastelands. :/
I'll post a list or fill in the blanks of any people might have missed.

Some trails are closed off in O.C. because of fires.

Newport’s Back Bay Loop
Moro Canyon in Crystal Cove
Bolsa Chica Wetlands
Red Rock Canyon Trail in Whiting Ranch (Hit by the fires)
The Sinks at Limestone Canyon (Might be hit by the fires)
Whiting Ranch "Dreaded Hill" (Definitely hit by the fires)..connects to Red Rock Canyon. "Hard core" for OC.
Beek’s Place via Black Star Canyon (Also "Hard Core" for OC).
Personal note on "Hard" hikes; if you've hiked in the mountain areas of the North West then these are more like "Average" hikes with the others on the list as casual

carbon canyon
silverado canyon past the homes up toward the old mine
oneal park in trabubo canyon spelled oneal wrong but you can find it
the trail to saddleback peak sometimes snow covered
the modjeska house in modjeska canyon great little town and ranch
kite ridge
the lake in laguna canyon
the shops in old town san juan capistrano, accross the tracks from the train station
trabuco creek near marguerite and os in misssion viejo
so many more
