Jambalaya and air fryer roasted chicken wings is what I had for dinner tonight.

No question ... Jambalaya
However, I'm making french bread pizza, with pepperoni and bacon, over grated parm and roasted sausage meat sauce. Haven't made t for a couple years, but seemed like a good night for it.

I want them in my hands.

I have this particular habit of seeing what meat is on special at the local market, then figuring out how to cook it. I picked up an 8 Lb pork butt roast for $1.59 at Smart and Final, cut it in half, froze one half, then went to Zion Market in SD to get ingredients to make a Korean style spicy pork stew in a crock pot. First I put in a bit of oil and added garlic, ginger, gochujong (spicy fermented pepper paste) red onions, green onions, japapenos, red any yellow sweet peppers, fresh ground black pepper, and a bottle of Lagunitas IPA. Turn on high, let it simmer for a bit, then added some chopped yellow potatoes, sweet potatoes and carrots. Chopped up the pork into about 1" cubes, threw it in then splashed some soy sauce over the top. Cooked it on high for about 3 hours, then served it over steamed rice with some chopped green onion and fresh cilantro on top, with some Korean sides (salted baby octopus, spicy radish and kimchee), washed down with an Arrogant Bastard Ale. 맛있는!
