The people who investigate the spread of COVID-19 aren't going to give a shit who the fuck you see, or for what purpose, so I wouldn't worry about it.

The google/apple app is SUPPOSED to anonymize the data.
While it is always possible that the data could be hacked, I think the vast majority of people would be ok with the way it works.
Hell, google ALREADY tracks your location by default, and the sky hasn't fallen yet.
If you are truly concerned, you can opt out. Or, you could turn off your normal phone and use a burner, which isn't a terrible idea anyway.
