I'm not a ramen expert, but I eat with one who is... inside the food court at Mitsuwa Japanese Market on Paularino, just East of Bristol by the 405 and on the other side of the freeway from South Coast Plaza.
Limited hours, but they have a ramen with pork belly that's really good... get extra pork belly!

There is a place called MoguMogu they specialize in a dry ramen ITS AMAZING. Their first location is in Sawtelle street in Los Angeles and they open one up in Costa Mesa. Mission accomplished, so far.
Finally got to enjoy Kitakata Ramen the other day. Amazingly, no waiting. 2pm-ish lunch. Service was friendly and attentive. Enjoyed the Chashu (pork) shoyu style ramen. I got the large and ate all of it. The large size provides 50% more noodles. Great shoyu broth, noodles plentiful and just right. The pork was very tender. Hold the onions, no veggies nor egg. Definitely will be back soon.
Santouka at Costa Mesa Mitsuwa. Food court style walkup. Shoyu style Chashu is my go to. Well packaged for transporting your takeaway meal. You can also order to enjoy on site and sit at a dozen or so food court tables. The noodles and broth were both very satisfying. I tend to like a little more flavorful shoyu broth. Definitely will be back often and order extra pork. The Hilton and Crown Plaza are only a few steps away. lol.
Thanks for the recommendation for Mogumogu. Hope to try soon. I believe that restaurant space used to be a Japanese restaurant I frequented 20+ years ago. The oyakodon was very good.

Mogumogu used to be Honda Box. But if you like noodles the Mazemen is the best.

Drive 8 minutes (or 50 with traffic) up to Tustin and dine at Tanakaya. Exceptional Japanese udon. Long lines with actual hungry Japanese who know good udon.
They don’t stay late for dinner so plan ahead.
