In a normal world insurance companies step in because farmers dont keep cows as pets... I'm guessing they are capital investment.

I am not a lawyer....
However in the US and I believe where ever these jabs are given the manufacturers are immune from any liability.
Sooooo folks there is no one to sue.

Yes, under Public Readiness and Emergency Preparedness Act (PREP Act) authorizes the Secretary of the Department of Health and Human Services to issue a PREP Act declaration. The declaration provides immunity from liability (except for willful misconduct) for claims against the vaccine manufacturers.
It helps get the vaccine out quicker and the manufacturer doesn't have to build liability exposure into the price.
But there is no recourse when it all goes south.
