Loft beds = long skinny lumber. It's all in the joinery to build something that will not come crashing down. Definitely use hard wood.
Why a lot of sanding?

You can avoid a lot of sanding.
Only the surface you will touch all the time (frame for mattress).
You will need a cordless screwdriver more than nails. Some come with a 1/8" (0.125") bit to drill pilot holes.
Borrow a square to get your corners square. Basically, it's five rectangles. (2 ends, 2 sides, and top) You might want to get steel corner plates to strengthen the sides and the ends. If you want to have it painted, then a little sanding, sealing, primer, and paint.
Good luck, have fun, and it should be doable in n 1 day.
